For the vanilla syrup:
1 1/4 cups sugar
1 cup water
1 cup corn syrup
1 teaspoon vanilla extract
Juice of 1/2 lemon
For the caramel syrup:
4 tablespoons salted butter
1 cup dark brown sugar, packed
3/4 cup + 1/2 cup heavy cream
1 teaspoon vanilla extract
For the vanilla syrup, add sugar, water and corn syrup to a saucepan and simmer until sugar dissolves. Remove from heat, and stir in vanilla extract and lemon juice. Cool to room temperature, then store in the fridge.
For the caramel syrup, melt butter in a saucepan on medium heat. Add brown sugar and stir with a wooden spoon to coat with butter. Cook for 3-5 minutes, until sugar is no longer grainy, and is thick and bubbling.
Remove from heat, and add 3/4 cup of heavy cream, whisking until incorporated. Return to heat, and cook for an additional 8 minutes on low heat, whisking occasionally. Add vanilla, then remove from heat and let cool to room temperature.
Whisk 1/2 cup of heavy cream with 3 tablespoons caramel syrup until soft peaks form.
Add 1/4 cup vanilla syrup, 1/4 cup caramel syrup and 1/4 cup club soda to a tall frosty mug. Stir to combine. Top off with club soda, and stir again. Top with caramel whipped cream, and enjoy!

- So something that not a lot of people know about me is that I'm a diehard Harry Potter fan. Read all the books, watched all the movies and something that intrigued me the most are all the treats that you can find in them and most importantly, this, butter beer. I'm gonna show you how to make it. Alright, so we're gonna make two really amazing syrups to flavor the butter beer and I'm starting with the vanilla one. Super simple, a lot of sugar, a little bit of sticky corn syrup, if it will come out. Oh, it needs help. So all the corn syrup and a little bit of water. So I'm just going to bring this to the simmer. I just want the corn syrup to dissolve, the sugar to dissolve and for it to nice and sticky and sweet. Alright, so that looks good. The sugar has dissolved. I'm gonna turn the heat off. Now this is when you're gonna add the vanilla, which will make it the vanilla syrup. And I always like adding a little squeeze of lemon 'cause it just brightens things up and makes it slightly fresh and not too sweet. And if you were to just mix this into a little bit of club soda you'd have your own homemade cream soda, but we're going the extra mile here today. So we're not stopping here. And you're gonna let that cool to room temperature. Yeah, you're gonna let that cool to room temperature and then we'll make the next syrup. Now it's time to make the caramel. So I'm starting with some salted butter and you want that to get nice and melted and this syrup is what's gonna give the butter beer its rich, butterscotchy flavor and that's exactly what you want. Alright so my butter is almost melted. In goes a whole bunch of brown sugar. So right now the sugar's pretty granular. It hasn't broken down. You want it to get nice and thick and bubbly and you can see already around the edges here that it's starting to do just that. You want the entire caramel to look like that. But, you know, the one thing about caramel is that you never want to walk away from it because you risk it burning. So keep your eyes on it. Be patient and you'll have an awesome caramel sauce. So you guys see how this caramel is starting to poof up, it's increasing in volume, getting nice and fluffy. So now what I'm gonna do is I'm gonna switch from a spoon to a whisk and we're gonna introduce the cream. So you wanna lower the heat a little bit, and this is when you have to be super careful, 'cause it can splash up so be very, very gentle. Add your cream in and then whisk away. Woo! And just whisk, whisk, whisk. You wanna incorporate that cream into that bubbling sugar and butter. That's homemade caramel, people. Alright, now the last thing to add is the vanilla. So just like with the first syrup, you wanna add that vanilla at the end 'cause you want it to stay nice and fresh. You don't want to cook it out too much. And then we're just gonna transfer it to a bowl and let this hang out, come to room temperature completely and then we'll be ready to assemble our butter beer. And any good butter beer has that, you know, that layer of foam on top, and the way that we're gonna make that is with a little bit of heavy cream and we're just gonna whip it up. So I wanna get some nice, soft peaks. Get a lot of air in there. Okay and you see how it's just starting to hold, but is still soft and smooshable. Remember that caramel syrup? I wanna flavor this whipped cream with a little bit of that so you're just gonna, look at that. And now we are ready to assemble. To get the ultimate butter beer experience, you have to have a frosty mug. So all I did was I spritzed my mug with a little bit of water, popped it into the freezer and then you get this cool, cloudy, frosty effect which is so important, 'cause guys, you went through all the trouble of making these syrups and whipped cream and come on, you gotta go there. So I'm gonna start off with the vanilla syrup and the caramel. Let's get that caramel. Oh girl, yes, yes. What I'm gonna do first, is I'm just gonna mix those two together. This is a super indulgent drink, but it's totally worth it. So some fizzy water and I'm gonna fill it up like about halfway first and then you wanna give that a mix. It's starting to look like butter beer. And now once that's mixed, you're gonna top it off with the rest of the soda. Look at that! It's like, it's so cool. It already has like a foam of its own. And then you're gonna top it off with a little bit of that caramel whipped cream. Like, how amazing does that look? It looks pretty incredible. Like, I think Hermione, my soul sister, would be proud. Okay, now time to give it a taste. Damn. Can we say damn? Can we, we can say damn, right? It's like soda meets butterscotch, meets creaminess. It's actually super refreshing. You'd think it'd be kind of like too sweet, but it's just perfectly sweet and I think Hermione would be proud. Girl, I feel ya. Alright, I hope you guys enjoy it.
