Cactus Snowballs
Don't worry, these button-cute cacti can't hurt you! But you won't be able to eat just one...
Ingredients
Cactus Snowball
- 1/2 cup cocoa powder
- 1 cup warm water
- 3/4 cup milk
- 1/2 cup butter, softened
- 2 cups sugar
- 2 eggs
- 2 teaspoons vanilla extract
- 1 1/4 cups flour
- 3/4 teaspoon baking soda
- 1/2 teaspoon salt
Frosting Filling
- 7 ounces marshmallow fluff
- 1/2 cup butter, softened
- 1 cup powdered sugar
- 1/2 cup shortening
Topping
- 2 cups coconut, shredded
- Green food coloring
- White sprinkles
- Fondant
Steps
Cactus Snowball
- Preheat oven to 350 degrees.
- Make the cake: Mix together cocoa powder and warm water. Add milk and set aside.
- Cream together butter and sugar until light and fluffy. Add eggs one at a time followed by vanilla extract.
- Add cocoa powder mixture and mix until smooth. Add flour, baking soda and salt. Mix until smooth and combined.
- Pour into silicone domes and bake 15 to 20 minutes or until a toothpick comes out clean. Remove from oven and let cool.
Frosting Filling
- In a large bowl, add butter, marshmallow fluff, powdered sugar and shortening. Mix until combined and smooth.
- Add half the frosting to a piping bag and fill each cake with frosting.
- Spread frosting all over the outside of each cake and roll in green coconut.
- Top with white sprinkles and flowers.
