Ingredients
Citrus Salad
- 1 grapefruit, peeled and sliced
- 1 tangerine, peeled and sliced
- 1 mandarine, peeled and divided into wedges
- Red pepper flakes, optional
- Green onion, white parts only, sliced
- 1/2 avocado, diced
- Mint leaves, as preferred
- Honey lime vinaigrette, as preferred
Honey Lime Vinaigrette
- 2 tablespoons freshly squeezed lime juice
- 1 1/2 tablespoons honey
- 1 garlic clove, minced
- Pinch of salt
- Pinch of pepper
- 3 tablespoons olive oil
Steps
Citrus Salad
- Prepare the dressing.
- Whisk all ingredients together in a bowl and set aside.
- Make the salad.
- Layer citrus and top with red pepper flakes, onion, avocado and mint leaves.
- Drizzle with honey lime vinaigrette and enjoy!

Kale Pesto
- 2 to 3 cloves of garlic, as preferred
- 3 cups packed kale
- 3/4 cup hemp seeds or toasted walnuts
- 2 tablespoons lemon juice
- 3/4 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 cup olive oil
- 1/4 cup grated Parmesan cheese, optional
- Red pepper flakes, optional, as preferred
Cauliflower Steak
- 1 cauliflower head
- Olive oil, as preferred
- Salt, to taste
- Pepper, to taste
- Lemon juice, optional
Toppings
- Kale pesto
- Crushed walnuts
- Red pepper flakes, optional
- Chopped parsley or basil, optional
Steps
Kale Pesto
- Mince garlic in a food processor, then add kale, hemp seeds or toasted walnuts, lemon juice, cheese if using, red pepper flakes if using, salt and pepper.
- Turn on the food processor and gradually drizzle in the oil until your pesto reaches your desired consistency.
- Scrape down the sides of the food processor as needed, season to taste and add more oil if needed.
- Finish and set aside.
Cauliflower Steak
- Preheat a grill pan over medium-high heat.
- Cut cauliflower head into 3 to 4 steaks, and season with olive oil, lemon juice, salt and pepper if preferred.
- Cook the cauliflower steaks for 4 to 5 minutes on each side, until the bottom begins to char.
Toppings
- Remove cauliflower steaks from heat and plate with kale pesto, chili flakes if desired, chopped parsley or basil, and crushed walnuts. Enjoy!

- 1/3 small red onions, thinly sliced
- 1/4 cup dried cranberries
- 1 pound strawberries, hulled and sliced
- 5 ounces goat or feta cheese
- 1/2 cup pecans
Balsamic Vinaigrette
- 3 tablespoons balsamic vinegar
- 1 tablespoon Dijon mustard
- 1/2 cup olive oil
- Salt, to taste
- Pepper, to taste
