• 2 boxes shortbread cookies
  • ¼ cup butter
  • Whipped cream
  • Caramel sauce
  • Caramel coffee pudding batter:
  • 3 tablespoons milk and coffee
  • 2 eggs
  • 3 tablespoons sugar
  • 1 tablespoon cold water
  • 3 tablespoons hot water


  1. Grate the shortbread cookies into a bowl.
  2. Mix in the butter.
  3. Place the tart shell dough into a tart pan lined with parchment paper.
  4. Heat the sugar and cold water in a pot over medium heat.
  5. When the mixture simmers and turns brown, mix in the hot water (this is the caramel).
  6. *It may splatter a little, so be careful not to burn yourself.
  7. Mix the milk and coffee and eggs into the caramel.
  8. Pour into the tart shell and bake in a water bath for 30 minutes at 340 degrees.
  9. Chill in the refrigerator to set for 1 hour.
  10. Remove from the pan and top with whipped cream and caramel sauce to taste.
