Carrot Cake With Brigadeirao

The Brazilian version of Carrot cake, you will love it!

Ingredients

  • 1 cup sugar
  • 3 carrots (peeled and chopped)
  • 3 eggs
  • 3/4 cup vegetable oil (180 milliliters)
  • 2 cups flour (230g)
  • 1 1/2 cup sugar (240g)
  • 15 grams baking powder
  • 395 grams (1 can) sweetened condensed milk
  • 200 grams cream
  • 1 cup of chocolate powder
  • 1 tablespoon melted butter
  • 2 eggs
  • 1 egg yolk

Steps

  1. Place 1 cup sugar in a saucepan and melt it in low heat until it turns into caramel.
  2. Place the caramel in a steam pudding mold.
  3. In a food processor, grind the carrots, eggs and oil to form a dough.
  4. In a bowl, mix the flour, 1 1/2 cup sugar and the baking powder.
  5. Add the carrot mixture into the bowl and mix with a spoon or spatula. Reserve.
  6. To make the "brigadeirão, in a food processor, mix the sweet condensed milk, the cream, chocolate powder, melted butter, 2 eggs and 1 yolk. Reserve.
  7. Place the carrot mixture on a baking sheet and add the "brigadeirão" on top.
  8. Bake it in a water bath at 350 °F for more or less 1 hour.
