Cauliflower Chowder

This tasty soup is what happens when corn chowder meets cauliflower goodness.

Ingredients

  • 1 tablespoon olive oil
  • 1 head cauliflower, chopped
  • 1 yellow onion, diced
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 4 cups low sodium chicken broth
  • 1 cup corn
  • 1 cup coconut milk
  • 1 teaspoon ground cumin
  • 1 teaspoon ground turmeric
  • 2 tablespoon chickpea flour
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon ground black pepper

Steps

  1. Melt oil in a large skillet over medium-high heat.
  2. Add the onion, carrots, and celery. Cook, stirring occasionally, until tender.
  3. Add the garlic and cauliflower and cook, stirring occasionally, for about 5 minutes.
  4. Add in the chicken stock, corn, cumin, turmeric, chickpea flour, and coconut milk, and stir together.
  5. Bring to a boil, then let simmer for 10-15 minutes, or until the vegetables are all tender.
  6. Season to taste and serve garnished with sliced green onions, if desired.
