Charmoula Spiced Chicken Skewers with Cucumber and Feta Salad

  • Charmoula chicken skewers:
  • 1 cup finely chopped fresh cilantro
  • 1 cup finely chopped fresh Italian parsley
  • 1 clove garlic, minced
  • Juice of 1/2 lemon
  • 2 teaspoons paprika
  • 2 teaspoons ground cumin
  • 1/2 teaspoon Aleppo pepper
  • 3/4 cup extra-virgin olive oil
  • 2 teaspoons kosher salt
  • 1 3/4 pounds boneless, skinless chicken thighs, cut into 1 1/2-inch chunks
  • Cucumber and feta salad:
  • 3 Persian cucumbers, sliced into half moons
  • 1 1/2 cups cherry or grape tomatoes, halved
  • 4.5 ounces sheep’s milk feta (stored in brine), cubed
  • 2 tablespoons extra-virgin olive oil
  • Juice of 1 lemon
  • Kosher salt
  • Aleppo pepper
  • Lemony dill Greek yogurt sauce:
  • 1 cup whole milk Greek yogurt
  • 1 clove garlic, minced
  • 1 tablespoon roughly chopped dill
  • 2 tablespoons extra-virgin olive oil
  • Kosher salt
  • Juice of 1/2 lemon
  • Aleppo pepper
  • To assemble:
  • Fresh dill
  • Lemon wedges
  • Greek olive medley
  • Warm flatbread


  1. Heat broiler to high, and adjust rack 4 inches from broiler.
  2. For the skewers: Combine all the ingredients except chicken in a small food processor and blend until smooth. Remove to a bowl, reserving 1/4 cup of the sauce, and toss in chicken pieces. Thread onto skewers and place on a sheet tray. Broil for 6 minutes per side, until cooked through, about 12 to 15 minutes total.
  3. Make the salad: Combine sliced cucumber, feta chunks and tomatoes in a bowl and drizzle lightly with olive oil, lemon, roughly chopped dill, a pinch of salt and a sprinkling of Aleppo pepper.
  4. Make the sauce: Combine Greek yogurt, minced garlic, dill, olive oil and salt in a small bowl. Transfer to a serving bowl and add a drizzle of olive oil, sprinkle of Aleppo pepper and a pinch of fresh dill on top.
  5. To serve: Add skewers to a platter, and add cucumber salad, sauce, mixed olives, warm flatbread and lemon wedges.
