Cheesy and Spicy Mapo Udon Noodles

Kick the flavor up a notch on this favorite comfort food when you add some warming spices.


  • 1 teaspoon sesame oil
  • 100 grams ground pork
  • Seasonings 1:
  • 1 tablespoon Doubanjiang (chili bean paste)
  • 1 teaspoon grated garlic
  • 1 teaspoon grated ginger
  • Chopped green onions
  • 1 tablespoon Sichuan pepper
  • Seasonings 2:
  • 1 teaspoon Tenmenjan (soy bean sauce)
  • 1/2 teaspoon soy sauce
  • 1/2 teaspoon sake
  • 1 teaspoon oyster sauce
  • 300cc water
  • Red pepper
  • 50 grams shredded cheese
  • 1 serving udon noodles, cooked
  • Green onions
  • Chili oil


  1. In a saucepan, add in sesame oil and ingredients from seasonings 1. Heat over medium heat until fragrant. Add in ground pork and cook until meat is no longer pink.
  2. Once pork has cooked through, add in ingredients from seasonings 2 and bring to a boil. Turn off heat and add in as much red pepper as you desire.
  3. Put udon inside and mix to combine all ingredients. Transfer to a bowl.
  4. Add in shredded cheese and mix to combine. Top with green onions and serve with a drizzle of chili oil.
