Cheesy Apple Stuffed Chicken Breasts

  • For the apple chicken breasts:
  • 2 tablespoons olive oil
  • 2 large chicken breasts, boneless and skinless
  • 1 cup sharp white cheddar cheese, thinly sliced
  • 1 red apple, thinly sliced
  • Salt and freshly ground black pepper
  • For sweet potatoes:
  • 2 medium sweet potatoes, cut into wedges
  • 1 red onion, thinly sliced
  • 1 tablespoon olive oil, plus additional for cooking
  • ½ teaspoon smoked paprika
  • Fresh coriander and mint, to serve
  • Salt and freshly ground black pepper


  1. Preheat the oven to 400 degrees.
  2. Butterfly each chicken breast horizontally and open like a book. Season with salt and pepper, then on 1 side of the chicken, place 7 to 8 thin apple slices alternating with the same amount of slices of cheese, lightly drizzle with olive oil. Fold the uncovered side over as if you were closing a book, and drizzle a little more olive oil and season well. Repeat until all the chicken breasts are filled.
  3. In a large baking dish, place the chicken breasts. Set aside.
  4. In a bowl, mix the sweet potatoes and onion with olive oil, smoked paprika, salt, and pepper until evenly coated.
  5. On the baking dish, arrange sweet potatoes and onions around the chicken breasts. Bake for 20 to 30 minutes until the chicken is cooked and the sweet potatoes and onions are soft and golden.
  6. Remove from the oven. Serve sprinkled with fresh coriander and mint.
