Ingredients
Apple Chicken Breasts
- 2 tablespoons olive oil
- 2 large chicken breasts, boneless and skinless
- 1 cup sharp white cheddar cheese, thinly sliced
- 1 red apple, thinly sliced
- Salt and freshly ground black pepper
Sweet Potatoes
- 2 medium sweet potatoes, cut into wedges
- 1 red onion, thinly sliced
- 1 tablespoon olive oil, plus additional for cooking
- ½ teaspoon smoked paprika
- Fresh coriander and mint, to serve
- Salt and freshly ground black pepper
Steps
Apple Chicken Breasts
- Preheat the oven to 400 degrees.
- Butterfly each chicken breast horizontally and open like a book. Season with salt and pepper, then on 1 side of the chicken, place 7 to 8 thin apple slices alternating with the same amount of slices of cheese, lightly drizzle with olive oil.
- Fold the uncovered side over as if you were closing a book, and drizzle a little more olive oil and season well. Repeat until all the chicken breasts are filled.
- In a large baking dish, place the chicken breasts. Set aside.
Sweet Potatoes
- In a bowl, mix the sweet potatoes and onion with olive oil, smoked paprika, salt, and pepper until evenly coated.
- On the baking dish, arrange sweet potatoes and onions around the chicken breasts.
- Bake for 20 to 30 minutes until the chicken is cooked and the sweet potatoes and onions are soft and golden.
- Serve sprinkled with fresh coriander and mint.
