Cheesy Spinach Arincini

Is there a savory snack more satisfying than crispy rice balls stuffed with cheese?


  • Olive oil for sautéing
  • 1 onion, chopped
  • 1 garlic clove
  • 2 cups white rice, cooked
  • 3 1/2 ounces Calabrian sausage (or pepperoni), cooked
  • 1/2 bunch of spinach, leaves only
  • Salt to taste
  • 1 egg
  • 1 cup white flour
  • 1/2 cup heavy cream
  • 1 tablespoon baking powder
  • 5 ounces mozzarella cheese sticks
  • Frying oil


  1. Sauté onion and garlic in olive oil.
  2. Add rice, sausage, and spinach; season with salt. Set aside to cool.
  3. Transfer mixture to a food processor; pulse until mixed.
  4. Return to mixing bowl, and add the egg, flour, cream and baking powder. Stir until combined.
  5. Grab a small handful of the mixture and form a rice cake. Add a cheese stick and close the mixture around it.
  6. Fry in hot oil until golden brown.
