Ingredients
Chester With Herbal Olive Oil
- 1 cup olive oil
- 2 tablespoons rosemary
- 2 tablespoons sage, chopped
- 2 tablespoons thyme
- 2 cloves garlic
- 1 Perdigão Chester (large chicken)
Winter Squash Stuffing
- 1/2 winter squash, cubed
- 2 tablespoons olive oil
- 2 cloves garlic, crushed
- Salt and pepper
- 1/4 teaspoon ground cinnamon
- 1 tablespoon rosemary
Steps
Chester With Herbal Olive Oil
- Preheat oven to 450 degrees.
- Add olive oil to a small saucepan and heat for 10 minutes.
- In a small bowl, add rosemary, sage, thyme and garlic. Add the oil and let rest for 10 minutes.
- Remove the offal from the Chester's insides and dry the skin with a paper towel.
- Stuff the Chester with the winter squash, tie the legs with string and season with salt and black pepper.
- Poke holes in the skin and tuck in the wings. Brush the herb oil all over the surface of the Chester.
- Bake for 30 minutes, then lower the heat to 350 degrees and brush again with the herb oil.
- Roast for another 60 minutes until the skin is golden brown and the internal temperature reaches 160 degrees.
Winter Squash Stuffing
- In a mixing bowl, add the winter squash, 1 tablespoon of olive oil, crushed garlic, salt and black pepper.
- Add the cinnamon and rosemary and mix well. Set aside.
