Chia Seed Pudding

Rain or shine, make every day beautiful when you start with a breakfast like this!


  • ¼ cup chia seeds (black or white)
  • 1 cups coconut milk (canned or from carton)
  • 2 tbsp rice malt syrup
  • 2 kiwi fruits
  • 4 strawberries
  • extra berries to decorate
  • mint leaves to decorate
  • Kiwi fruit layer
  • 5 kiwi fruits (peeled, cubed and frozen)
  • 2 tbsp rice malt syrup
  • 1 banana
  • 1 cup coconut milk (canned or from carton)
  • Strawberry fruit layer
  • 2 cups strawberries (frozen)
  • 2 tbsp rice malt syrup
  • 1 banana
  • 1 cup coconut milk (canned or from carton)


  1. To prepare fruits
  2. Peel the kiwis and slice. Clean the strawberries and slice.
  3. To prepare chia seed layer:
  4. Add chia seeds to a large mixing bowl. Pour coconut milk in and mix. Allow to sit for 5 minutes. The chia seeds will soak up the milk and expand slightly. Add rice malt syrup and mix. Set aside.
  5. To prepare Kiwi and strawberry fruit layers
  6. Add frozen kiwis, coconut milk, rice malt syrup and sliced banana to a food blender and blend until well combined. Rinse the blender and repeat with the strawberry layer ingredients.
  7. Stick the kiwi fruits to the bottom inside of your serving cups. Serving cups should be at least 400ml in size. Pick ones that are clear so you can see the fruits. Gently pour in the kiwi smoothie into each cup.
  8. Carefully add chia seed mixture on top.
  9. Stick strawberries to the top of the glass and gently pour in strawberry layer.
  10. Add some fresh berries on top and a mint leaf to decorate before serving.
