Chicken in Cheddar-Chive Waffle Cones

Sweet, savory and spicy, this fried chicken is served in a cheddar-chive waffle cone drizzled with a maple hot sauce syrup.


  • For the chicken:
  • 1 pound boneless skinless chicken breasts, cut into nuggets
  • 1 cup buttermilk
  • 1 teaspoon salt, divided
  • 1 1/2 cups all-purpose flour
  • 1 tablespoon sugar
  • 1/2 teaspoon pepper
  • 1 egg, beaten
  • 6 cups oil, for frying
  • For the waffle cones:
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 1/2 cup cheddar cheese
  • 1/4 cup minced chives
  • 8 large egg whites
  • 1/2 teaspoon cream of tartar
  • 2 teaspoons cornstarch
  • 8 tablespoons unsalted butter, melted
  • Nonstick cooking spray
  • For the sauce:
  • 1/4 cup maple syrup
  • 1 teaspoon red hot sauce


  1. Make the sauce: In a small bowl, whisk together maple syrup and hot sauce. Set aside.
  2. Make the chicken: In a large, heavy-bottomed pot, heat the oil to 350 degrees.
  3. In a large bowl, combine chicken, buttermilk and 1/2 teaspoon salt. Marinate for 30 minutes.
  4. In another large bowl, combine flour, sugar, salt and pepper. Dredge the chicken in egg and then in the flour. Fry the chicken in batches until golden and crispy.
  5. Make the waffles: In a large bowl, whisk flour, salt, cheddar and chives.
  6. In a separate bowl, combine egg whites and cream of tartar. With a hand mixer, beat until soft peaks form, about 2 minutes. Add cornstarch and beat until the egg whites are glossy and hold stiff peaks, then turn the hand mixer to high and beat for 45 seconds until egg whites are stiff. Fold dry ingredients into egg white mixture until combined, then fold in butter.
  7. Spray a waffle iron with nonstick spray and heat to medium. Add 1/4 cup batter and cook for about 45 seconds.
  8. Scrape the cooked waffle off the iron with an offset spatula, wrap the waffle around a cone-shaped item and let set. Repeat until there are 8 cones.
  9. Assemble the chicken waffle cones: Add about 1/2 cup chicken nuggets to a waffle cone. Drizzle with sauce to serve.
