These chicken meatballs are the perfect appetizer to share with friends.
3 1/2 ounces chopped ham
1 cup shredded mozzarella cheese
3 1/2 ounces ricotta
1 tablespoon olive oil
1 onion, chopped into small cubes
1 clove garlic
1/4 cup chopped bacon
10 1/2 ounces ground chicken
1 slice of dry bread, crumbled
1/2 cup breadcrumbs
1 cup flour
2 eggs, whisked
1 cup breadcrumbs
2 1/2 cups Alfredo sauce
1 cup grated Parmesan
Chopped parsley, to taste
Preheat oven to 350 degrees.
In a bowl, mix the ham, shredded cheese and ricotta. Set aside.
In a skillet, saute the onion, garlic and bacon in olive oil until golden. Set aside.
Place the chicken in a bowl and season with salt and black pepper. Add the crumbled bread, breadcrumbs and the onion mixture. Stir to combine.
Scoop up a handful of mixture and press in the middle to form a small space. Fill with a spoonful of the ham and cheese mixture, and form a ball. Dip balls in flour, beaten eggs, then breadcrumbs. Fry in hot oil until golden. Drain on paper towels and set aside to cool.
Place the Alfredo sauce and meatballs in a baking dish, and sprinkle with cheese.
Bake for approximately 15 minutes, or until the cheese is au gratin.
Finish with chopped parsley.
