Chicken Teriyaki Tacos With Pineapple Salsa

Put a refreshingly sweet twist onto savory chicken soft tacos with spicy, fruity salsa.


  • 3-4 skinless, boneless chicken breasts, cut into 1/2-inch pieces
  • 1 tablespoon vegetable oil
  • 3 garlic cloves, grated
  • 2 tablespoons ginger, grated
  • Salt and pepper
  • 2 tablespoons honey
  • 2 tablespoons mirin
  • 2 tablespoons sake
  • 2 tablespoons soy sauce
  • White rice
  • Small flour tortillas
  • Butter lettuce
  • Pineapple salsa:
  • 2 cups pineapple, grilled & diced
  • 1 lime, juiced
  • 1/3 cup red pepper, diced
  • 1/4 cup red onion, chopped
  • 1 tablespoon cilantro, chopped
  • 1 jalapeño, seeded and minced
  • Salt and pepper


  1. In a large mixing bowl, combine chicken, vegetable oil, garlic, ginger, salt and pepper. Set aside to marinate for 30 minutes.
  2. While the chicken is marinating prepare the pineapple salsa and teriyaki sauce. Combine all of the salsa ingredients, and set aside until ready to use. For the teriyaki sauce, combine the honey, mirin, sake and soy sauce; set aside until ready to use.
  3. Heat a large skillet over medium heat. Add chicken and fry until golden brown. Add the teriyaki sauce, let the sauce boil and toss the chicken to make sure it's evenly coated. Once the teriyaki sauce has turned into a thick glaze, the chicken is done. Remove from heat.
  4. Build your tacos. Start with either a flour tortilla or butter lettuce. Add rice, a spoonful of chicken and top with pineapple salsa.
