Chicken Wings With Orange, Apple and Pineapple Sauce

  • 5 to 8 chicken wings

  • Salt and pepper

  • Oil, for frying

  • Sauce:

  • 1/4 cup water

  • 1/2 cup sugar

  • 1 1/2 tablespoons garlic powder

  • 1 teaspoon soy sauce

  • 2 tablespoons teriyaki sauce

  • 3/4 cup pineapple juice

  • 1/2 teaspoon lemon juice

  • 1/4 small apple, diced

  • 1 orange


  1. For the sauce: In a small sauce pot over medium-low heat, add water and sugar. Whisk until sugar has dissolved. Add garlic powder, soy sauce, teriyaki sauce, pineapple juice and lemon juice. Stir to combine and bring to a boil. Once boiling, reduce heat to low and allow sauce to reduce for 20 to 25 minutes. Once reduced, allow to cool at room temperature and then place in the fridge to chill.

  2. For the chicken wings: Heat a fryer to 500 degrees, or fill a large pot halfway with oil and place on high heat.

  3. In a large bowl, season chicken wings with salt and pepper. Carefully place chicken in oil and fry until cooked, 6 to 8 minutes depending on size. Test to make sure chicken is cooked to 165 degrees. Once done, place on a draining rack to cool.

  4. Add diced apple to the sauce. Cut the orange in half, and scrape orange juice and pulp into syrup. Mix well. Drizzle over wings, toss and serve.

- This is not your normal KFC fried chicken, this is my recipe and I'm gonna show you guys how to make it. Let's get started. So we're gonna start off with our sauce. I'm first gonna add our water and our sugar. We're gonna whisk this until all the sugar has dissolved, so we're gonna turn our heat a little low and we're gonna start adding each component to this dish. So I just added my garlic powder, now I'm gonna add my soy sauce. This is where the sauce gets its saltiness from. Now I'm gonna add my teriyaki sauce. This is where the sweetness comes from. Along with one of our last ingredients, which is the pineapple juice. Then I'm gonna cut this lemon in half and just squeeze a little bit, not too much. You wanna make sure you don't get any seeds. The lemon that I just squeezed in there is gonna bring more of like a brightness to that sauce, it's more of like a pop, you get it? So now that we have all of our components in there we're gonna go ahead and stir it. Now once this is at a boil wanna turn this down on a low heat and we're gonna let it reduce for about 20 to 25 minutes. So I've gotten my chicken out of the fridge and I have my sauce, my sauce is chilled, it's reduced. Now we're gonna season our chicken. We wanna start off with just salt and pepper. I don't wanna use too much seasoning on the chicken, because the sauce has a lot of flavor, a lot of seasoning in it. And then we're just gonna sprinkle some salt and pepper over the chicken. Are you guys ready? Because this oil is like really hot. Just slowly add the chicken to the oil. It's gonna take about a good five to six minutes for this chicken to cook. One quick way to tell when your chicken is done or almost done is it's gonna start to float. Now go ahead and pull it out of the oil. They're all starting to float now. And we're gonna sit it on this cooling rack. Has a nice golden, crispy, light brown color, that's what you're looking for, that's what you want. While that's cooking we're gonna go ahead and dice up some of this apple. I'm just gonna cut me about 1/4 of that apple. I don't wanna have large chunks of apple inside of my sauce, but I wanna make sure that I have a relatively good size, just so you can identify that it's an apple. So we're gonna go ahead and add this to my sauce. Cut our orange in half, now I'm just gonna literally take half of that and scrape some orange juice, some orange pulp. That perfect saucy texture of that sauce. These, like I said, are also starting to float, they're ready, they're golden crispy brown. We're gonna allow these to cool on a rack as well. So we're gonna go and add our chicken wings to the bowl, start off with the ones that have cooled down first. Well, so now that our chicken is nice and fried, it's chilled down to the right temperature, we can go ahead and add this beautiful sauce that we just made. Make sure that you get all of that goodness, all that flavor, all that sauce, you want all that sauce. Go ahead, toss it around, make sure every piece gets well coated. Yeah, there we go. Yeah, um hmm. Got a little bit on my shirt, it's all good. This is one of the best fried chicken recipes that you will ever taste. So now I'm gonna taste this. This is a messy recipe, so gets all over your fingers, it's fine, it's cool. It's hot, but that's some good chicken wings. Now I'm gonna go finish the rest of these, I'll see you guys next time.
