• 12 ice-cream sandwiches, story bought
  • 200g chocolate mint aero bars
  • ½ cup of your fave choc mint candies
  • Whipped Cream
  • 600ml thickened/whipping cream
  • 2tsp vanilla extract
  • Chocolate sauce
  • 300gm good quality dark chocolate
  • 50g butter
  • 50g brown sugar
  • 200ml cream


  1. Chocolate sauce
  2. Add all the ingredients into a large microwave safe bowl and microwave for 20 seconds at a time, mixing each time until smooth. Any left-over sauce can be stored in an air tight container for up to 3 months.
  3. Whipped cream
  4. To whip your cream, add the whipped cream and vanilla extract to a large mixing bowl. Use a hand mixer to whip to stiff peaks.
  5. To construct the cake add some whipped cream on your serving plate and add four ice cream bars next to each other. Add some more whipped cream on top and use the back of a spoon to spread it evenly on top of the ice cream bars. Drizzle some chocolate sauce and then repeat until you have three layers of ice cream sandwiches.
  6. Finish with a generous drizzle of chocolate sauce and top with mint candy.
