Chocolate Chip Cookie Dough Cupcakes

Cookies n' cupcakes - what more could you ask for in a snack?

Ingredients

Cupcake Batter

  • 3 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 sticks butter, softened
  • 1 1/4 cups sugar
  • 4 eggs, room temperature
  • 1 tablespoon vanilla
  • 1 1/4 cups milk
  • To garnish:
  • Chocolate buttercream frosting
  • Crumbled cookies

Cookie Dough Batter

  • Cookie dough batter:
  • 1 stick butter, softened
  • 3/4 cup brown sugar, packed
  • 1 teaspoon vanilla
  • 1/2 teaspoon salt
  • 1 cup all-purpose flour
  • 2 tablespoons milk
  • 1/2 cup chocolate chips

Steps

Cupcake Batter

  1. Preheat oven to 350 degrees. Place cupcake liners inside a cupcake tin.
  2. In a mixing bowl, whisk flour, baking powder and salt; set aside.
  3. In the bowl of a stand mixer, beat butter until soft, about 1 minute.
  4. Add sugar slowly and continue beating on medium-high speed until creamed together. Reduce speed. Beat in eggs one at a time, scraping down the sides.
  5. Add vanilla (mixture will appear separated). Add dry ingredients to wet, alternating with the milk until smooth.
  6. Fill cupcake liners halfway full. Set aside.
  7. Roll enough cookie dough into quarter-sized balls to place into the half-filled cupcake liners.
  8. Top cookie dough balls with more cupcake batter and bake for 15 to 20 minutes.
  9. Use remaining cookie dough to bake a small batch of cookies for 15 minutes. Once cupcakes and cookies are done, allow to cool.
  10. Pipe each cupcake with chocolate buttercream frosting. Sprinkle crumbled chocolate chip cookie on top. Serve.

  2. Mix in vanilla and salt. Add flour; mixture will appear crumbly.
  3. Add milk, then fold in chocolate chips.
