Decadent chocolate and coffee waffles are only made better with a healthy pour of coffee maple syrup.
Ingredients
- 1 1/2 cups unsweetened plain almond milk
- 1 teaspoon lemon juice
- 1/4 cup coconut oil, melted
- 1 1/2 teaspoons vanilla extract
- 1/3 cup maple syrup
- 2 tablespoons unsweetened cocoa powder
- 1 1/2 cups whole wheat flour
- 1/2 cup rolled oats
- 1 tablespoon flaxseed meal
- 1/4 teaspoon sea salt
- 1 1/2 teaspoons baking powder
- 2 tablespoons coconut sugar
- 1 tablespoon instant coffee
- 1/3 cup dark chocolate chips, plus more for topping
- Strawberries, for topping
- 1 1/4 cups maple syrup
- 2 tablespoons plus 1 teaspoon instant coffee
Steps
- In a medium bowl, combine the almond milk and lemon juice and let set for 5 minutes to curdle.
- Add the coconut oil, vanilla and maple syrup; whisk to combine.
- In a separate medium bowl, add the cocoa powder, flour, oats, flaxseed meal, salt, baking powder, sugar and instant coffee. Whisk to combine.
- Add the wet ingredients to the dry ingredients. Mix well until incorporated, then fold the dark chocolate chips into the mixture.
- Let the batter rest as the waffle iron preheats.
- Once the waffle iron is ready, spray with coconut oil (or nonstick cooking spray) and scoop on about a third of the batter.
- Cook according to the waffle iron instructions. While the waffle cooks, start on the coffee maple syrup.
- Combine the maple syrup and coffee in a small saucepan over medium-high heat, whisking until the mixture comes to a boil.
- Reduce heat to medium-low and let cook for 10 minutes, stirring occasionally.
- Strain with a fine-mesh strainer; serve hot.
- Top waffles with berries and a generous amount of coffee maple syrup.
