Chocolate Covered Iced Coffee Popsicles

Chocolate covered iced coffee popsicles bring new meaning to the term "iced coffee."

Ingredients

  • 3 cups brewed coffee
  • 1/2 cup full-fat coconut milk, at room temperature
  • 1/4 cup pure maple syrup
  • 1 cup dark chocolate morsels
  • 1 teaspoon coconut oil

Steps

  1. Mix together the coffee, coconut milk, and pure maple syrup.
  2. Pour mixture into popsicle molds.
  3. Place in freezer and freeze for 6-8 hours, adding in the popsicle sticks after about 1 hour.
  4. Once the popsicles are frozen, make the chocolate sauce by adding chocolate and coconut oil to a double boiler and stirring until melted.
  5. Drizzle the sauce over the popsicles and then put back in the freezer to set, about 30 minutes.
