Chocolate Covered Potato Chip Cake

Your sweet and savory fantasies collide in this rich chocolate loaf cake topped with chocolate coated potato chips.


  • 50 grams cocoa powder
  • 175 grams all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon bicarbonate of soda
  • 225 grams caster sugar
  • 175 grams unsalted butter, softened
  • 2 large eggs, at room temperature
  • 1 teaspoon vanilla extract
  • 175 milliliters milk
  • Chocolate sauce to drizzle.
  • Chocolate coated potato chips:
  • 300 grams dark chocolate, melted
  • 100 grams white chocolate, melted
  • 4 tablespoons vegetable oil
  • 1 pkt potato chips (aprx 30 nice whole chips)
  • Chocolate Ganache:
  • 500 grams dark chocolate
  • 200 milliliters thickened whipping cream


  1. Preheat a fan-forced oven to 180C (356F). Spray a loaf tin with cooking oil and line with baking paper. Set aside.
  2. In a large mixing bowl add the cocoa powder, plain flour, salt and bicarb soda. Turn mixer on low speed and allow it to mix for a couple minutes to help everything combine well! (alternatively you may do this by sifting the ingredients together). Add the softened butter until there is no butter visible and it's well incorporated into the dry.
  3. Next, add milk, sugar and eggs into the bowl and mix until well combined.
  4. Add cake batter to loaf tine. Bake for 30-35 min or until a toothpick inserted comes out clean. Allow to cool completely on a wire cooling rack before frosting.
  5. Chocolate ganache:
  6. Add chocolate and cream to a microwave safe bowl and microwave for 20 seconds at a time, mixing each time. Set aside to set at room temp. If you need to soften it, microwave for 10 seconds at a time until it gets to a spreading consistency.
  7. Chocolate coated potato chips:
  8. Add chocolate to a large microwave safe bowl and microwave for 20 seconds at a time, mixing each time until smooth. Add oil and mix until very well combined.
  9. Dip potato chips into chocolate. Allow excess chocolate to drip off. Place on a baking tray and allow to set. Drizzle with melted white chocolate. Allow to completely set.
  10. To finish off the cake, place on a serving tray or cake board and coat with ganache using a small offset spatula. Use a large cake scraper to level out the cake and smoothen out all the sides. Clean the excess chocolate ganache at the bottom.
  11. Drizzle with chocolate sauce on the sides and add chocolate sauce on the top. Place chocolate coated potato chips on top to finish the cake off.
  12. Cake will keep for 3 days in an airtight container in the fridge. Potato chips don't go stale because they're coated in chocolate.
