Chocolate Dinner and Dessert
Make chocolate a complete meal with red wine, chocolate chicken and an easy chocolate soufflé.
Ingredients
- 3 ounces bittersweet chocolate, chopped
- 2 tablespoons butter
- 1/2 teaspoon vanilla
- 2 egg yolks
- 2 egg whites
- 2 tablespoons sugar
- Pinch of salt
- Pinch of cream of tartar
- 2 tablespoons unsweetened cocoa
- Powdered sugar
Steps
- Preheat oven to 375°F.
- In a large bowl, melt chocolate and butter. Add vanilla, and whisk in yolks one at a time until smooth. Set aside.
- In a clean bowl, beat egg whites with sugar, salt and cream of tartar until stiff peaks form. Fold egg whites into chocolate.
- Grease ramekins with butter, dust with unsweetened cocoa, and tap out excess. Spoon batter into ramekins.
- Bake until puffed and set, approximate 20 minutes. Serve with powdered sugar.

- 2 chicken legs, bone in, skin on
- Salt and pepper
- 4 ounces pancetta
- 1 medium onion, chopped
- 4 cloves garlic, minced
- 4 stalks celery, chopped
- 2 carrots, chopped
- 8 ounces button mushrooms, sliced
- 3 tablespoons tomato paste
- 1 (750 milliliters) bottle red wine
- 2 ounces dark chocolate, chopped
- 4 cups chicken stock
- 1 teaspoon fresh thyme
- 2 bay leaves
- 2 tablespoons unsalted butter
- Cooked pasta, to serve
Steps
- Salt and pepper chicken. Sear in heavy pot until browned. Remove from pan.
- Add pancetta to hot pot, render fat. Add onion, garlic, celery, carrots, mushrooms and tomato paste. Cook until onions become slightly translucent.
- Return chicken to pot. Add red wine and chocolate; stir until chocolate melts.
- Add chicken stock, fresh thyme and bay leaves. Bring to a boil. Cover and lower heat to a simmer. Let simmer for 45 minutes.
- Remove cover, then toss in the butter and stir until melted.
- Serve with pasta.
