Chocolate Dinner and Dessert

Make chocolate a complete meal with red wine, chocolate chicken and an easy chocolate soufflé.

Ingredients

  • 3 ounces bittersweet chocolate, chopped
  • 2 tablespoons butter
  • 1/2 teaspoon vanilla
  • 2 egg yolks
  • 2 egg whites
  • 2 tablespoons sugar
  • Pinch of salt
  • Pinch of cream of tartar
  • 2 tablespoons unsweetened cocoa
  • Powdered sugar

Steps

  1. Preheat oven to 375°F.
  2. In a large bowl, melt chocolate and butter. Add vanilla, and whisk in yolks one at a time until smooth. Set aside.
  3. In a clean bowl, beat egg whites with sugar, salt and cream of tartar until stiff peaks form. Fold egg whites into chocolate.
  4. Grease ramekins with butter, dust with unsweetened cocoa, and tap out excess. Spoon batter into ramekins.
  5. Bake until puffed and set, approximate 20 minutes. Serve with powdered sugar.

  • 2 chicken legs, bone in, skin on
  • Salt and pepper
  • 4 ounces pancetta
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 4 stalks celery, chopped
  • 2 carrots, chopped
  • 8 ounces button mushrooms, sliced
  • 3 tablespoons tomato paste
  • 1 (750 milliliters) bottle red wine
  • 2 ounces dark chocolate, chopped
  • 4 cups chicken stock
  • 1 teaspoon fresh thyme
  • 2 bay leaves
  • 2 tablespoons unsalted butter
  • Cooked pasta, to serve

Steps

  1. Salt and pepper chicken. Sear in heavy pot until browned. Remove from pan.
  2. Add pancetta to hot pot, render fat. Add onion, garlic, celery, carrots, mushrooms and tomato paste. Cook until onions become slightly translucent.
  3. Return chicken to pot. Add red wine and chocolate; stir until chocolate melts.
  4. Add chicken stock, fresh thyme and bay leaves. Bring to a boil. Cover and lower heat to a simmer. Let simmer for 45 minutes.
  5. Remove cover, then toss in the butter and stir until melted.
  6. Serve with pasta.
