Chocolate-Filled Donut

With a crispy chocolate base, brigadeiro cream filling and sprinkles, this rich dessert is ridiculously chocolatey.

  • 3 3/4 cups flour
  • 1/2 cup cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/3 cup unsalted butter, room temperature
  • 3/4 cup granulated sugar
  • 1 egg
  • 2/3 cup semi-sweet chocolate, melted
  • 1 1/4 cups milk
  • Oil, for deep-frying
  • 1 cup brigadeiro chocolate truffle mixture
  • 1 cup chocolate sprinkles

  1. In a bowl, mix the flour, cocoa, baking powder and baking soda. Set aside.
  2. Using a mixer, beat the butter with the sugar until it reaches a fluffy consistency. Add the egg, and continue to mix until combined. Use a spatula to fold in melted chocolate.
  3. Stir in half of the dry ingredients, then add the milk, continuing to stir to combine. Mix in the rest of the dry ingredients, stirring with a wooden spoon.
  4. Spread the mixture onto a baking pan covered in wax paper and refrigerate for 30 minutes.
  5. Use a round cookie cutter (about 3 inches in diameter) to cut circles out of the dough. Use a smaller cutter (about 1 inch in diameter) to punch a hole in the center of each circle, forming donuts.
  6. Deep-fry in hot oil and drain on paper towels.
  7. Using a toothpick, make small holes in the top of the donuts. Transfer brigadeiro mixture to a pastry sleeve and fill the donuts with the mixture.
  8. Decorate with Brigadeiro mixture and chocolate sprinkles.
