Ingredients

Chocolate Mousse Cake

  • 2 egg yolks
  • 15g granulated sugar
  • 140ml milk
  • 5g gelatin sheet
  • 180g chocolate, 58% or higher cacao content
  • 120g whipped cream

Graham Cracker Crust with Walnuts

  • 55g graham crackers
  • 15g walnuts
  • 30g unsalted butter

Fruits

  • 3 kiwis
  • 4 bananas
  • For Serving:
  • Whipped cream (soft peaks), as needed
  • Mint leaves, as needed

Steps

Chocolate Mousse Cake

  1. Submerge the gelatin in ice water until. Drain and squeeze to remove any excess water. Set aside.
  2. In a bowl, combine egg yolks and granulated sugar. Whisk until white in color.
  3. Add milk to a small pot and heat over flame.
  4. Once it’s boiled, add it to the mixture from step 7 and mix.
  5. Strain the mixture through a mesh strainer while pouring it back into the small pot. Mix constantly with a rubber spatula over low to medium heat.
  6. Once the mixture begins to thicken, remove from the heat. Add in gelatin and chocolate and mix until melted.
  7. In a separate bowl, combine the chocolate mixture and whipped cream.
  8. Pour the chocolate mousse mixture into the cake tin from step 6. Place the flower-shaped fruits and pour the mousse on top. Repeat this process again so there are two layers of fruits.
  9. Chill in the refrigerator until set.
  10. Slice with a warmed knife and garnish with whipped cream and mint leaves. Enjoy!

Graham Cracker Crust with Walnuts

  1. Melt the butter for the Graham Cracker Crust and set aside.
  2. Add graham crackers and walnuts to a zip-lock bag. Smash into crumbs using a rolling pin.
  3. Mix in melted butter. Pess evenly into the bottom of a rectangular cake tin with a spoon.
  4. Let chill in the refrigerator until set.

Fruits

  1. Slice bananas and kiwis to the length of the cutter, then shape the fruits using a flower-shaped cutter.
