Chocolate Samoa Cake Donuts

One of your favorite Girl Scout Cookies is now in fluffy, chocolatey donut form.


  • 50 grams cocoa powder
  • 175 grams all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon bicarbonate of soda
  • 225 grams caster sugar
  • 175 grams unsalted butter, softened
  • 2 large eggs, at room temperature
  • 1 teaspoon vanilla extract
  • 175 milliliters milk
  • 200 grams melted chocolate
  • Samoa Mixture
  • 250 ounce bag of caramel, unwrap all of the caramels, set aside
  • 1 cup shredded unsweetened coconut, toasted
  • 5 tablespoons milk
  • 1/4 teaspoon salt


  1. Samoa Mixture
  2. Melt unwrapped caramels and milk in a medium mixing bowl for 1 minutes, remove from microwave and stir, then place back in microwave for 30 seconds and stir again. Repeat process until caramel is completely melted and smooth, stir in salt and toasted coconut.
  3. Cupcakes
  4. Preheat a fan-forced oven to 180C (356F) or 160C (320F) for a fan forced oven. Use vegetable oil spray / cooking spray to oil a cake donut baking tray.
  5. In the bowl of a stand mixer fitted with the paddle attachment, add the cocoa powder, plain flour, salt, bicarb soda and sugar. Turn mixer on low speed and allow it to mix for a couple minutes to help everything combine well! (alternatively you may do this by sifting the ingredients together). Add the softened butter there is no butter visible and it's well incorporated into the dry.
  6. Next, add milk and eggs in a jug and whisk until well combined.
  7. Add wet ingredients to dry ingredients in a slow and steady stream until no dry ingredients are visible. Scrape down the bowl and mix for another 20 seconds.
  8. Transfer batter to a piping bag or zip lock bag and pipe batter into donut tray filling up half way. Bake for 12 min or until a skewer inserted into the cake comes out clean. Gently tap the tray onto a clean bench to help the donuts come out. Transfer to a cooling rack.
  9. Add a tablespoon of Samoa mixture and sandwich with another cake donut.
  10. Finish off with a drizzle of melted chocolate.
