Cinnamon Bun Bowls

Is this a legitimate excuse for eating ice cream for breakfast? We think so.

Ingredients

  • 2 1/3 all-purpose flour
  • 1 teaspoon salt
  • 30 grams chilled butter, cubed
  • 1/4 cup sugar
  • 1/2 tablespoon dried yeast
  • 3/4 cups milk, lukewarm
  • 2 eggs, at room temperature
  • 3/4 cups brown sugar, packed
  • 1 tablespoon cinnamon
  • 75 grams butter, softened
  • Vanilla ice cream

Steps

  1. Add the flour and salt together in a large bowl.
  2. Rub in the butter until the mixture resembles fine bread crumbs (or use a food processor). Stir in the sugar and yeast.
  3. Make a well in the centre and add the milk and one egg.
  4. Stir to gradually incorporate until a soft dough forms.
  5. Knead for 5 minutes on a lightly floured surface.
  6. Shape into a ball and place in a lightly oiled bowl, turning to coat in oil.
  7. Cover with a tea towel and set aside in a warm place to rise for 1 hour and 30 minutes, until it has doubled in size.
  8. In the meantime prepare the filling by combining all ingredients and stir to combine.
  9. Preheat oven to 400 degrees F.
  10. Turn the dough out onto a lightly floured surface and using a rolling pin, roll out a rectangle to roughly 21' by 14'.
  11. Generously sprinkle all the filling onto the dough and evenly spread.
  12. Starting at one end, roll up the dough and then slice evenly into 2' thick slices.
  13. Then taking one portion and laying it swirl up, use the rolling pin to roll it flat.
  14. Place the roll on to to an upside down greased muffin tin and repeat with the remaining slices.
  15. Place the muffin tin on a baking sheet to prevent any melted sugar from dripping into your oven.
  16. Bake for 15-18 minutes until golden brown.
  17. Let cool completely before turning over and filling with the ice cream of your choice.
