Cinnamon Sugar Donuts

With whole wheat flour and Greek yogurt in this treat, you can have your donut and eat it too.

Ingredients

  • 2/3 cup whole wheat pastry flour
  • 1/3 cup spelt flour
  • 1/3 cup coconut sugar, plus more for topping
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1 teaspoon ground cinnamon, plus more for topping
  • 1/8 teaspoon sea salt
  • 1 large egg
  • 1/3 cup plain Greek yogurt
  • 1 cup unsweetened almond milk
  • 2 tablespoon coconut oil, plus more to grease pan and top donuts
  • 2 teaspoon pure vanilla extract

Steps

  1. Preheat oven to 350 degrees F. Grease a donut mold with coconut oil and set aside.
  2. In a large bowl, combine the dry ingredients (whole wheat pastry flour, spelt flour, coconut sugar, baking powder, baking soda, ground cinnamon, and sea salt, and set aside.
  3. In a separate mixing bowl, whisk together the egg, plain Greek yogurt, almond milk, coconut oil, and pure vanilla extract.
  4. Add the wet ingredients to the dry ingredients and stir, just until combined.
  5. Spoon the batter into the prepared pan, filling between 3/4 and full. You may also want to use a piping bag to do so.
  6. Bake for 12-14 minutes or until a toothpick comes out clean. Let sit for a minute and then remove from the pan.
  7. Place on a wire rack and rub the top with coconut oil. Sprinkle with additional coconut sugar and cinnamon for topping, if desired.
