Cloud Bread 3 Ways

All the deliciousness of bread without the gluten or the guilt and three great new ways to enjoy it.

Ingredients

  • 3 eggs
  • 1/8 teaspoon cream of tartar
  • 3 tablespoon plain Greek yogurt

Steps

  1. Preheat oven to 300 degrees F and line a baking sheet with parchment paper; set aside.
  2. Separate the eggs into two bowls, with the egg whites in one bowl and the yolks in the other.
  3. Add the cream of tartar to the egg whites and whip into stiff peaks using a mixer on high speed.
  4. Add the Greek yogurt into the yolks and mix until well combined.
  5. Fold half the egg whites into the yolks until just combined. Then, add the remaining egg whites, and fold again until incorporated.
  6. Place approx. 1/2 cup of the mixture on the tray; there should be about 4-6 total. Spread the mixture gently into circles using a spoon.
  7. Place in the oven and bake for 25-30 minutes or until golden-brown around the edges and on the bottom.
  8. Allow to cool for 30 minutes.

Ingredients

  • 2 slices cloud bread
  • 1/2 avocado, sliced
  • 1/2 cup mixed baby greens
  • 1 large tomato, sliced
  • 4 slices turkey

Steps

  1. Line the sliced avocado on one side of the cloud bread sandwich.
  2. Top with the greens, followed by the sliced turkey and tomato.
  3. Add top to the sandwich.

Ingredients

  • 1 slice cloud bread
  • 2 tablespoon marinara sauce
  • 4-6 fresh basil leaves
  • 3 ounces fresh mozzarella, sliced

Steps

  1. Spoon the marinara sauce over the cloud bread, leaving a small rim for the crust. Top with basil and cheese.
  2. Bake at 400 degrees F for 6-8 minutes.

Ingredients

  • 1 slice cloud bread
  • 1/2 avocado, mashed
  • 1 egg, fried
  • 1/8 teaspoon sea salt
  • 1/8 teaspoon sesame seeds

Steps

  1. Spread the mashed avocado over the cloud bread.
  2. Top with the fried egg and then season with the sea salt and sesame seeds.
