Creamy Coconut Horchata

Put an unexpectedly creamy, tropical spin on this classic rice-based drink.


  • 3/4 cup long grain brown rice, soaked
  • 1/2 can (about 1 cup) coconut milk, mixed well before dividing
  • 3/4 cup sugar in the raw
  • 2 teaspoons cinnamon
  • 2 teaspoons vanilla
  • Pinch of salt
  • 6 cups coconut water


  1. Soak the rice in 3 cups of water for at least 3 hours to soften.
  2. Drain the rice, and blend with the coconut milk, sugar, cinnamon, pinch of salt, and vanilla until completely creamy. Stir in the coconut water.
  3. Pour over a tall glass of ice. Top with more cinnamon if you like. Pour the rest into a lidded container and chill until ready to drink.
