Coconut Lime Cupcakes

Coconut and lime cupcakes with coconut flavoured cream cheese frosting.

Ingredients

Cupcakes

  • 1 1/2 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 large eggs
  • 3/4 cup granulated sugar
  • 1/2 cup oil, canola/vegetable
  • 1 lime, juiced and zested
  • 1 tsp coconut extract
  • 3/4 cup coconut milk, from a can

Frosting

  • 8 oz cream cheese, chilled
  • 1/2 cup unsalted butter, softened
  • 1 1/2 tsp coconut extract
  • 1 1/2 cups powdered sugar
  • 2 to 4 tbsp shredded coconut

Steps

Cupcakes

  1. Add the flour, baking powder, baking soda, and salt in a bowl and mix until well combined. Set aside.
  2. Add the eggs and sugar in a separate bowl and whisk together. Then add in the oil, lime zest and juice, coconut extract, and coconut milk and whisk until well combined.
  3. Add the dry ingredients to the wet ingredients and mix until just combined. Take care to not over mix
  4. Line a cupcake pan with paper cups and fill each cup 3/4 full.
  5. Bake at 400 degrees Fahrenheit for 14 minutes or until the cake springs back when lightly touched. (Alternately use a toothpick to test the centre of a cupcake.) Allow cupcakes to cool completely.

Frosting

  1. To make the frosting Add the cream cheese and butter into a large mixing bowl and beat together with a hand mixer until pale and creamy. Then add the coconut extract and powdered sugar all at once and mix until just combined.
  2. Fit the end of a piping bag with a Wilton 8B piping tip and pipe a swirl of frosting on top of each cupcake. Garnish with a lime wedge and sprinkle with shredded coconut.
