Coffee & Milk Agar Jellies

Coffee and milk striped agar jellies with a swirl of whipped cream on top.

Ingredients

Coffee Layer

  • 5 tbsp instant coffee powder
  • 1 ½ cups boiling water
  • 1 ½ cups cold water
  • 3 tsp agar agar powder
  • 2/3 cup sugar
  • Pinch of salt

Cream Layer

  • 1 ½ cups water
  • 3 tsp agar agar powder
  • ¼ cup sugar
  • 1 ½ cups evaporated milk

Decorations

  • Shaved dark chocolate

Steps

Coffee Layer

  1. Add the sugar and coffee powder into a large microwave safe bowl and whisk to combine. Add the boiling water and whisk until the coffee and sugar is dissolved. Microwave for 5 minutes.
  2. In a separate bowl, add the cold water and agar powder. Whisk to combine. Microwave for 20 seconds at a time, whisking each time until the agar powder is dissolved. It will take about 3 minutes.
  3. Add the coffee mixture and salt into the bowl with the thickened agar mixture and whisk to combine.

Cream Layer

  1. Add the evaporated milk, sugar and vanilla into a large microwave safe bowl and whisk to combine. Microwave for 3 minutes.
  2. In a separate bowl, add the cold water and agar powder. Whisk to combine. Microwave for 20 seconds at a time, whisking each time until the agar powder is dissolved. It will take about 5 minutes.
  3. Add the milk mixture and salt into the bowl with the thickened agar mixture and whisk to combine.

Assemble

  1. To assemble the jellies, I used a large, silicone square ice cube tray. Add 2 tbsp of the coffee mixture into each cavity. Allow to chill and set in the fridge for 20 minutes and then add 2 tbsp of the milk mixture into each cavity. Repeat that a second time. Allow the jellies to set for an hour before carefully tipping the mould over onto a serving plate.
  2. Whipped Cream
  3. Add the cream and vanilla extract to a large mixing bowl. Use electric hand beaters to whip to stiff peaks.
  4. Fit the end of a piping bag with a Wilton 1M piping tip and pipe swirls of cream on top of each jelly. Finish by sprinkling with shaved dark chocolate on top.
