Make cold brew coffee at home and take it one step further with a scoop of homemade, no-churn vanilla ice cream.
Ingredients
Cold Brew Coffee
- 1/2 cup ground coffee
- 2 cups cold water
- 1/2 cup chocolate covered mini choc chips or coffee beans, coarsely chopped
- 4 tablespoons thickened cream
Ice Cream
- 1 1/2 cups thickened/whipping cream
- 1/2 cup sweetened condensed milk
- 1 teaspoon vanilla extract
Steps
Cold Brew Coffee
- Coarsely grind the whole coffee beans. Place them in a large bowl or jar and add the water.
- Stir gently, then cover and let sit at room temperature for at least 12 hours.
- Strain the coffee through a coffee filter or a fine-mesh sieve lined with cheesecloth. You should have about 2 cups coffee.
- Pour about a tablespoon of thickened cream into each glass.
- Pour 1/2 cup coffee over the ice cream and sprinkle with mini choc chips.
Ice Cream
- Add cream, condensed milk and vanilla extract into a large mixing bowl and whip to stiff peaks using a hand mixer.
- Transfer cream mixture to a deep baking dish. Freeze for at least 2-3 hours.
- Scoop the ice cream into four glasses.
