Just in time for autumn: four easy-to-make, cozy comfort recipes!
Ingredients
- 1 garlic clove, crushed
- 1/3 cup heavy cream
- 4 tbsp water
- 1 potato, very thinly sliced
- ½ cup mozzarella cheese
- Butter, for greasing
- ½ cup Parmesan cheese, finely grated
- Salt and freshly ground black pepper
- A few chives, finely chopped
Steps
- Preheat oven to 350 degrees.
- In a mixing bowl, whisk the crushed garlic into the heavy cream, and set aside.
- In a bowl with 4 tablespoons water, add the potato slices and cover, then microwave for 3 minutes. Drain.
- Grease a mug with a generous amount of butter and add mozzarella.
- Next, begin to layer the potatoes, seasoning with salt, black pepper and Parmesan every few layers.
- Pour the garlic cream over the potatoes.
- Place in the oven for 20 to 30 minutes, or until the potatoes are completely tender.
- Flip the mug upside down on a plate, release the potato gratin and sprinkle chives on top.
- Serve, and enjoy.
Ingredients
- 1 spring onion, finely sliced
- 1 tbsp butter, melted
- 1/3 cup arborio rice
- 1/3 cup butternut squash, finely diced
- 2 sage leaves, chopped
- 2/3 cup chicken stock
- 3/4 cup Parmesan cheese
Steps
- Preheat oven to 400 degrees.
- In a mug, place the spring onion, melted butter, and rice, then stir together.
- Add the chopped butternut squash, sage, and chicken stock, then give a quick stir.
- Cover with a cartouche and bake for 18 minutes until cooked.
- Stir through most of the Parmesan then sprinkle remainder on top.
- Serve, and enjoy.

- Butter, for greasing
- 3 eggs
- 1/2 tbsp chipotle paste
- 2 tbsp black beans
- 2/3 cup mozzarella cheese, grated and divided
- Salt and pepper, for seasoning
- A handful of tortilla chips, slightly crushed
- 3 tbsp salsa
Steps
- Preheat oven to 400 degrees.
- Grease the inside of the mug with butter and add the eggs, chipotle paste, black beans, half the cheese, salt, and pepper.
- Whisk until completely combined, then add crushed tortilla chips and salsa.
- Place mug in the oven and cook for 20 minutes.
- Remove from oven and turn the oven to broil.
- Top the chilaquiles with the remaining cheese and broil for 3 minutes.
- Serve and enjoy.

- Chocolate Cake
- Butter, for greasing
- 3 tbsp all-purpose flour
- 3 tbsp granulated sugar
- 1 1/2 tbsp cocoa powder
- 1 egg
- 2 tbsp milk
- 2 tbsp vegetable oil or sunflower oil
- 2 tbsp chocolate chips
- 1 tbsp Nutella
Steps
- Preheat oven to 350 degrees.
- Grease inside of mug with butter.
- In a small bowl, mix all the ingredients, except the Nutella, together and pour into the mug.
- Add the Nutella into the center of the chocolate batter.
- Place in oven for 30 minutes.
- Once baked, flip upside down onto a plate and serve straight away.
