Confetti Calamari

Forget calamari rings. Calamari curls are where it's at.

Ingredients

  • 1/2 pound calamari
  • 1 cup all-purpose flour, plus more if needed
  • 1-2 tablespoons paprika
  • Salt, to taste
  • Oil, for deep-frying
  • Zest from 1 lemon
  • 2-3 tablespoons mayonnaise

Steps

  1. Heat fryer to 360°. Blot and dry the calamari with paper towels.
  2. Cut the tubes open by sliding your knife up the inside and cut outward. Unfold the flat piece the long way and cut into thin strips. For the tentacles, cut off the stingers, then cut the tentacles in half the long way to make two symmetrical pieces.
  3. To a large Ziploc bag, add approximately 1 cup flour, 1-2 tablespoons paprika, and salt. Add the calamari to the bag, and zip the bag 90 percent across. Blow air into the opening to make the bag puff out, and zip it shut. Now shake, shake, shake.
  4. Pour the calamari into a colander with a bowl underneath to remove the excess flour.
  5. Drop the calamari into the fryer and cook for 3-5 minutes, or until golden brown.
  6. Make lemon zest mayo by combining lemon zest and mayonnaise in a small bowl.
  7. Transfer calamari to a mixing bowl. Add salt and toss. Serve in a newspaper with lemon zest mayo.
