Ice Cream Cookie Cups

You know that feeling when you want to lick the bowl? Well, now you can just eat the whole darn thing.

Ingredients

Cookie cups

  • Cookie dough
  • Melted chocolate
  • Chopped pistachios
  • Chopped almonds
  • Dried strawberries

Cookie Dough

  • 1/2 cup butter
  • 1/2 cup granulated sugar
  • 1 egg
  • 1 3/4 cup flour
  • 1/4 cup chocolate chips

Steps

Cookie cups

  1. Preheat oven to 390 degrees.
  2. Oil a muffin tin. Add a scoop of cookie dough to each muffin opening and press evenly. Add a round of parchment paper and weights to each.
  3. Bake for 10 minutes. Remove the weights and cook for another 10 minutes.
  4. Once cookie cups have cooled, dip edges in melted chocolate and fill with ice cream and other desired toppings.

Cookie Dough

  1. In a bowl, combine all cookie dough ingredients and form into a ball of dough. Place in the refrigerator.
