  • ¼ tsp. salt
  • 30g unsalted butter, at room temperature
  • 20g  granulated sugar
  • 1 large egg
  • 1 tsp. vanilla extract
  • 120 g dark chocolate chips
  • 30g packed brown sugar
  • Buttercream
  • 100g unsalted softened butter
  • 1 cup powdered sugar
  • 1 tsp bubblegum flavouring
  • 2 drops sky blue food gel
  • Thick shake
  • 7-8 scoops vanilla ice cream
  • 1 cup milk
  • 1 tsp bubblegum flavouring
  • 2 drops sky blue food gel
  • chocolate sauce
  • chocolates sprinkles
  • 50g melted dark chocolate
  • x4 Candy eyes
  • Cream
  • 100ml thickened/whipping cream
  • 3 tbsp sweetened condensed milk
  • 1 tsp vanilla extract

  1. Cookies
  2. Preheat the oven to 180°C. Line 2 baking sheets with parchment paper.
  3. In a bowl, sift together the flour, baking soda and salt. Beat the butter, brown sugar and granulated sugar until smooth, about 2 minutes. Add the egg and vanilla and mix on low speed until blended.
  4. Slowly add the flour mixture and mix just until incorporated. Stir in the chocolate chips.
  5. Using a small ice cream scoop or heaping tablespoon, drop the dough onto the prepared baking sheets. Spacing the dough mounds 2 inches (5 cm) apart.
  6. Bake the cookies, 1 sheet at a time, until the bottoms and edges are lightly browned and the tops feel firm when lightly touched, 10-13 minutes. Let the cookies cool on the baking sheets for 5 minutes, then transfer the cookies to wire racks to cool completely.
  7. To decorate cookies, fit the end of a piping bag with a grass tip and pipe the blue frosting on the cookie starting around the outside, making your way in. Add candy eyes and chill.
  8. If you want to speed up the process you can use store bought cookies! :)
  9. Buttercream
  10. Add softened butter and powdered sugar to a large mixing bowl and beat on low speed until it comes together. Then beat on high speed until the mixture pales in colour. Add blue food gel and bubblegum flavouring extract. Beat until well combined.
  11. Cream
  12. Add thickened cream to a large metal mixing bowl. Whip on high using a hand mixer until cream thickens to stiff peaks that can hold their shape. Cover with plastic wrap and set aside in the fridge.
  13. Thick shake
  14. Add ice cream, milk, bubblegum flavouring and blue food gel to a food blender and mix until everything is well combined.
  15. Use a squeeze bottle to drizzle some chocolate sauce on the inside of each serving glass. Set aside to chill.
  16. While that’s chilling, roughly chop up the remaining cookies. Dip the chopped cookies in some melted dark chocolate and stick them to the rim of each serving glass.
  17. Fill with blue thick shake to about an inch from the top.
  18. Fit the end of your piping bag with a 1M tip and fill with whipped cream. Pipe a swirl of frosting on top of the milkshake. It may sink a little. One way to prevent this is to pipe starting in the centre and make your way around the outside of the jar so that the cream sticks to the glass. Then continue piping to create a cone effect.
  19. Add the cookie monster cookie on top of the cream and finish with sprinkles.
