Cookies 'N Cream Meringues

This chocolate dessert is ridiculously light, crispy and delicious.

Ingredients

  • 2 large egg whites
  • 1/2 cup sugar
  • 1 teaspoon vanilla
  • 1 teaspoon corn flour
  • 8 Oreo cookies crushed, plus extra for decorating
  • 1/2 cup white chocolate, melted

Steps

  1. Preheat the oven to 235F and line 2 baking trays with parchment paper. Put the egg whites in a dry medium-sized bowl and whisk until soft peaks form. Gradually add in the sugar one tablespoon at a time until fully incorporated. Continue whisking until the sugar has dissolved and the meringue is thick and glossy. Stir in the corn flour, vanilla and cookies.
  2. Drop heaped domes onto prepared trays and top with a few more Oreo pieces. Bake for 1 hour and 10 minutes or until they are crisp and hollow. Turn off the oven and leave the meringues to cool with the door ajar, 30 minutes.
  3. Pour 2 tablespoons of melted chocolate over each meringue and top with more cookie pieces. Let set either in the fridge or at room temperature.
