Creamed Corn

Who knew you could make creamed corn CLEAN??


  • 1 tablespoon olive oil
  • 5 medium ears fresh corn, steamed or grilled
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon ground black pepper
  • 1 13.5 ounces can full fat coconut milk
  • 2 green onions, sliced
  • 1 tablespoon grated parmesan


  1. Heat a large pan over medium heat.
  2. Remove the cooked corn from the cob using a knife.
  3. Add the corn and season with the salt and pepper.
  4. Add the coconut milk and bring to a simmer.
  5. Cook until coconut milk reduces by half, approximately 10-12 minutes.
  6. Mix in the green onions and parmesan, and serve.
