1/2 teaspoon freshly ground black pepper, plus more to taste
1 lemon, zested
3/4 cup extra virgin olive oil
1 tablespoon unsalted butter, melted
4 Yukon gold potatoes
3 tablespoons freshly grated Pecorino Romano cheese
Preheat the oven to 450°F. Line a baking sheet with aluminum foil.
In a medium mixing bowl, combine the garlic, 1 tablespoon chives, thyme, salt, pepper, lemon zest, olive oil and butter. Set aside to infuse the oil.
Prepare the potatoes using the Norpro Apple Master, creating spiral potatoes. Place the spiraled potatoes, stretching them out like an accordion, onto the baking sheet. Brush the potatoes with the garlic-herb oil. (Note: the remaining oil can be stored in the refrigerator in an airtight container for 3 days.)
Roast in the upper third of the oven for 30 minutes until golden brown and crispy. Remove from the oven and garnish with remaining chives and Pecorino Romano.
Serve with various sauces (cheese sauce with bacon; chipotle aioli, etc.)
