Dairy-Free Roasted Marshmallow Milkshake

Ingredients

  • 1 package marshmallows

  • 1 cup almond milk

  • 2 cups dairy-free vanilla ice cream

Instructions

  1. Preheat oven to broil. Line a baking tray with aluminum foil and lightly coat with cooking spray.

  2. Arrange half the marshmallows in one even layer on the tray, and broil for 1 to 2 minutes, until the marshmallows are golden and charred. Allow to cool.

  3. In a blender, combine roasted marshmallows, milk and ice cream. Blend until smooth, and pour into a cold glass. Toast remaining marshmallows, and use to garnish milkshake. Enjoy!

- Growing up I used to love eating toasted marshmallows hot and gooey off the stick. So I thought, how do I elevate that experience into something a little more drinkable. I came up with this. A toasted marshmallow milk shake. It's creamy, it's rich, and guess what? There's absolutely no dairy in here. Let's go make it. To get this milkshake started I'm gonna toast of some marshmallows. I have a sheet pan here lined up with a little bit of aluminum foil and sprayed it with a little bit of nonstick cooking spray and that way those marshmallows won't stick. I'm just gonna reserve some marshmallows for garnish later. I'm gonna pop these under a broiler. We want them to get nice and toasty and gooey and you know, a little charred because that charred flavor is gonna add so much to the milkshake. So our marshmallows are nice and toasty. Look at them, they are perfection. Does a marshmallow get much more perfect than that? I don't think so. Anyhow, now we're gonna get to assembling our milkshake. So, I think the whole lot of marshmallows are gonna go in. I want it to be super toasty tasting. And these marshmallows are gonna make it. Ooh, they're gooey, they're puffy, mm. There's something about toasted marshmallows that's so good. So here's the kicker with this recipe. It is dairy free because I know there's so many of you guys out there that can't consume dairy. I'm using cashew milk based vanilla ice cream. This stuff is so delicious. So we're gonna get a few scoops of that in there, mm. I want this milkshake to be super thick and unctuous and indulges. And instead of milk, I'm gonna go in with a little bit of almond milk. Just to thin things out a touch. Alright, lid on and we're gonna turn this bad boy on. Ready? And just like that it's done. I can already tell the little specks of the charred marshmallows are creeping through and they look amazing. Now, I'm just gonna pout it on. Oh, yes. Super thick and rich. And as if that wasn't enough, I'm gonna garnish this with some toasted marshmallows. So all you're gonna do is thread some marshmallows onto a skewer and we're gonna toast these off over an open flame until they get nice and charred. If they ever catch flame, just blow it out. It's a lot of fire, okay. Just a little more. Perfection. And then just slide them in. Ooh, they're toasty and hot. Okay, doesn't that look crazy delicious? That looks so good. Toasted marshmallows milkshake. I've been waiting for this. Let's do it. Mm. Toasting the marshmallows made all the difference. You get all those little tiny charred bits in there which add a little of smokiness. It's so so good. It's creamy, it's rich, it's thick. And you would never know that there was no dairy in it. Toasted marshmallow milkshake. It's one for the books.
