French toast isn't the only yummy dish made with day-old bread.

Ingredients

  • 4 slices day-old Italian bread
  • 1 jar Nutella
  • 1/2 cup milk
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon cinnamon
  • 3 eggs
  • Maple syrup
  • Sliced strawberries
  • Powdered sugar
  • 1 tablespoon butter

Steps

  1. Slice bread into 4 thick slices.
  2. Spread a thick layer of Nutella on all four slices of bread and place together to make 2 sandwiches.
  3. In a baking dish, combine milk, nutmeg, cinnamon and eggs. Whisk until combined.
  4. Soak each sandwich in the mixture for 15 seconds per side.
  5. Place a nonstick pan over medium heat and melt the butter.
  6. Cook sandwiches in the pan for 2 minutes, flip and cook for another 2 minutes, or until nicely browned. Transfer to a plate and garnish with syrup, strawberries and powdered sugar.

  • 4 heirloom tomatoes, different colors
  • 1 red onion, thinly sliced
  • 1 roasted red pepper from a jar, sliced in strips
  • 1 tablespoon capers
  • 2 tablespoons red wine vinegar
  • 6 tablespoons olive oil
  • Salt and pepper
  • Fresh basil

Steps

  1. Cube up day old bread, and transfer to a mixing bowl.
  2. Add tomatoes, onion, red pepper, capers, oil, vinegar and salt and pepper. Give it a quick toss.
  3. Garnish with basil and serve.

  • 2 boneless, skinless chicken breasts
  • Day-old Italian bread
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 cup flour
  • Zest of 1 lemon
  • 3 eggs
  • 1/2 cup vegetable oil
  • Salt and pepper

Steps

  1. Cube up stale bread and pulse in a food processor with dried oregano, dried basil and lemon zest.
  2. Between two pieces of plastic wrap, pound out the chicken breasts to about 1 inch thick.
  3. Arrange three individual plates. One with breadcrumbs, one with eggs, and one with flour. Coat the cutlets in flour, egg and then breadcrumbs.
  4. Shallow fry in hot oil 2-3 minutes per side.
  5. Transfer to a plate and enjoy!

  • Scoop of vanilla ice cream

  2. Add all ingredients to a mug.
  3. Microwave for 2 minutes.
  4. Top with vanilla ice cream.
