Deluxe Inari Sushi

Who wouldn't love veggies, seafood and rice stuffed into a slightly sweet, deep-fried tofu pocket?


  • 2 jumbo-sized deep-fried tofu
  • 1 1/2 cups seasoned sushi rice
  • Seasonings:
  • 50 milliliters soy sauce
  • 30 milliliters mirin
  • 2 cups water
  • 50 milliliters sugar
  • 1 teaspoon instant dashi powder
  • Garnish:
  • Thinly-sliced egg omelette
  • Boiled shrimp
  • Boiled green vegetables
  • Cooked and seasoned lotus roots
  • Imitation crab
  • Boiled snow peas
  • Tobikko fish eggs
  • Boiled carrot
  • Simmered shiitake mushrooms
  • Ham
  • Cherry tomatoes
  • Shiso
  • Myoga ginger in vinegar


  1. Cut into one edge of the deep-fried tofu and open up the pouch.
  2. In a saucepan, combine soy sauce, mirin, water, sugar and instant dashi powder. Put the tofu in and cook over medium heat. Turn off the heat and let it sit until cool, letting the tofu marinate in the seasonings.
  3. Put seasoned sushi rice into the tofu pouch. Garnish with your favorite toppings.
