- 1 cup honey
- 1/2 tablespoon fresh ginger juice
- 4 drops mint extract
- In a small saucepan, heat honey to 300°F (hardball stage).
- Meanwhile, grate fresh ginger and squeeze out the juice. Once the honey reaches temperature, add the ginger juice and mint extract and stir.
- Line a baking sheet with a silicone mat or parchment paper. Use a spoon to form small rounds of the candy. Allow to cool and harden completely. Store in a jar or wrap individually with wax paper.
