Donut Tunnel Cake

A roll of chocolate donuts is stuffed with salted caramel frosting and covered in more frosting. You may never go back to normal donuts again.

Ingredients

  • 12 chocolate cake donuts
  • Chocolate shavings
  • Chocolate frosting
  • Salted caramel cream cheese frosting

Steps

  1. Using a small circular pastry cutter, cut a 3/4-inch circle in the middle of each donut. Set aside, and prepare the fillings.
  2. Place a dollop of frosting on the center of a large plate. Place a donut in the center, and cover the donut with a circle of frosting. Place another donut on top. Repeat until all donuts are used and a tower of donuts is created.
  3. Use a small rolling pin to help stabilize the stack while frosting. Set in the freezer until firm. Remove from freezer and pour salted caramel cream cheese frosting from the top hole to the bottom hole. Return to freezer.
  4. Remove stacked and filled donuts from the freezer. Place donuts on their side to create a long tunnel. Cover tunnel with remaining chocolate frosting. Drizzle with remaining salted caramel and top with chocolate shavings.
  5. Cake will keep up to 4 days.

Ingredients

  • 1/2 cup butter, softened
  • 2/3 cup cocoa powder
  • 2 cups powdered sugar, sifted
  • 1/3 cup whole milk
  • 1 teaspoon vanilla

  1. In the bowl of a stand mixer fitted with the paddle attachment, combine butter and cocoa, and mix until smooth. Add powdered sugar, milk and vanilla until smooth. Fill a pastry bag with a round tip, and set aside.

  • 1 cup cream cheese, room temperature
  • 1/2 cup butter, room temperature
  • 1 cup powdered sugar, sifted
  • 1 tablespoon lemon juice
  • 2 teaspoons vanilla

  1. In the bowl of a stand mixer with the paddle attachment, cream butter and cream cheese until smooth. Add powdered sugar, lemon juice and vanilla. Mix until combined. Add salted caramel and set aside.

  • 1 cup sugar
  • 1/4 cup cold water
  • 1/2 cup heavy cream
  • 2 tablespoons unsalted butter
  • 1 teaspoon salt

Steps

  1. In a medium saucepan, combine sugar and cold water. Cook on medium-high heat without stirring until the sugar becomes golden, approximately 8 minutes. Remove from heat, and carefully stir in heavy cream, being cautious of splattering sugar. Stir in butter and salt. Reserve 4 tablespoons for the cream cheese frosting and 4 tablespoons for decorating the top of the cake, and set aside.
