Daelman's Stroopwafels

Heat a stroopwafel on top of your hot coffee for a delicious sweet treat. It's the perfect mid-morning or afternoon snack! Want it? Go here:


  • For the apple pie filling:
  • 2 apples, peeled, cored, very small diced
  • 1 tablespoon butter
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup sugar
  • For the cornstarch slur:
  • 1 tablespoon water
  • 2 teaspoons cornstarch
  • To assemble:
  • 8 caramel wafer cookies
  • 1 pint vanilla ice cream


  1. To make the apple pie filling, cook all filling ingredients in a small saucepan on medium heat for 5 minutes, until the apples are slightly softened. Add in the cornstarch slur half at a time until mixture reaches a nice, gooey consistency.
  2. To assemble, scoop vanilla ice cream on top of one wafer cookie, and push down the center with a small spoon to make a dent. Fill dent with the apple filling, and sandwich with another wafer cookie.
