Easy Chocolate Pasta

Make this homemade pasta with chocolate noodles and vanilla cream sauce tonight.


  • Pasta:
  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 7 large egg yolks
  • 1 large egg
  • 1 1/2 teaspoon olive oil
  • 1 tablespoon milk
  • Sauce:
  • 1 cup sugar
  • 1 vanilla bean, sliced and gutted for beans
  • 1/2 cup heavy cream
  • 1 cup cream cheese
  • 1 pint mascarpone cream
  • Nuts:
  • 1 egg white
  • 1/2 cup sugar
  • 1 stick butter, cooked until brown
  • 2 cups macadamia nut halves


  1. Pasta:
  2. On a work surface, combine flour and cocoa powder. Make a well in the center, and add eggs, oil and milk. Stir by hand until a cohesive dough forms.
  3. Remove and knead dough for 15 minutes (the longer the better).
  4. Segment into 4 quarters and roll out into long, thin sheets.
  5. Using a pastry cutter, cut into long rectangles similar in size to tagliatelle.
  6. Set aside and let dehydrate at room temperature.
  7. Sauce:
  8. In a small sauce pot, combine sugar, vanilla beans and heavy cream. Bring to a simmer.
  9. Add cream cheese and mascarpone to a bowl. Pour in cream mixture and blend with a hand mixer until incorporated.
  10. Nuts:
  11. In a mixing bowl, whisk together egg white, sugar and browned butter.
  12. Once fully mixed together, add macadamia nuts and stir to fully coat.
  13. Place on a baking sheet covered with aluminum foil, and bake at 325 degrees F for 10 minutes.
  14. Let rest and set aside.
  15. Assembly:
  16. Add pasta to boiling water and let cook for 2 minutes.
  17. Strain pasta, and top with sauce. Stir to mix.
  18. Plate and garnish with nuts.
