Easy Home Made Marshmallow recipes

Marshmallows are really easy to make at home! Here’s three different flavours. Plain vanilla, funfetti and rocky road!

Ingredients

  • Corn Starch Mixture
  • 2 cups powdered sugar
  • 2 cups corn starch
  • Vanilla Marshmallows
  • 200g (1 ½ cups) caster sugar
  • 190ml (¾ cup) boiling water
  • 2 tbsp gelatin
  • 190ml (¾ cup) cold water
  • 1 tsp vanilla extract
  • Strawberry Funfetti Marshmallows
  • 3 drops pink food gel
  • 1 cup funfetti sprinkles
  • 1tsp raspberry flavouring
  • Rocky Road Marshmallows
  • ½ cup chopped dark chocolate
  • ½ cup chopped maraschino cherries
  • ½ cup chopped pistachios
  • 1 cup pink mini marshmallows

Steps

  1. Vanilla Marshmallows
  2. To prepare the cake tin, add the corn starch and powdered sugar into a large mixing bowl and use a whisk to combine.
  3. Spray a 9x9 inch square baking tin with oil spray and then dust well with the powdered sugar corn starch mixture. Tip the excess powder into the sink to get rid of it. Set aside.
  4. Add the cold water and gelatin into a small mixing bowl and mix using a fork until well combined. Set aside to rest.
  5. Next, add the boiling water and sugar into a saucepan. Use a whisk to mix for 3 minutes until the sugar is dissolved and you reach 240F. Once you reach that temperature, take off the heat and add the gelatin and whisk gently until the gelatin is dissolved. Set the mixture aside to cool to room temperature for about 30 minutes.
  6. Add the cooled mixture to the bowl of a stand mixer and fit it with the whisk tool. Whisk on high speed for 10-12 minutes until the mixture triples in volume and resembles a thick glossy meringue. Add the vanilla extract at about the 5-minute mark.
  7. Pour the marshmallow mixture into the prepared baking tin and spread around using a spatula. Set aside at room temperature to set for 4 hours.
  8. Dust generously with the corn starch and powdered sugar mixture. Turn over onto a chopping board or your work bench and dust again with the powdered mixture. Use a large clean knife to slice into cubes.
  9. Strawberry Funfetti Marshmallows
  10. To make these marshmallows, you’ll need the same ingredients as the vanilla marshmallows. Repeat the process of making the vanilla marshmallows. Add the pink food gel and raspberry flavouring when you add the vanilla extract.
  11. Pour half of the pink marshmallow mixture into prepared baking tin and sprinkle with hald the confetti sprinkles. Then add the remaining marshmallow mixture and use a spatula to spread around. Sprinkle the remaining sprinkles on top.
  12. Set aside at room temperature and cut into squares.
  13. Rocky Road Marshmallows
  14. To make these marshmallows, you’ll need the same ingredients as the vanilla marshmallows. Repeat the process of making the vanilla marshmallows. Once you’ve finished making the marshmallow mixture add the chopped chocolate, cherries and mini marshmallows. Use a large spatula to fold through the mixture. You’ll need to work quickly because it’ll set quickly.
  15. Pour the marshmallow mixture into the prepared baking tin and spread around using a spatula. Sprinkle with chopped pistachios. Set aside at room temperature to set for 4 hours.
  16. Slice up into 16 squares.
  17. Marshmallows can be stored in an airtight container for up to 3 days.
