Easy Melon Pan Ice Cream Sandwich

Take a pint of ice cream and English muffins and turn them into a sweet, doughy treat.


  • 4 English muffins, cut in half
  • 300 grams vanilla ice cream
  • 10 grams granulated sugar
  • Dough:
  • 20 grams butter, softened at room temperature
  • 20 grams granulated sugar
  • 50 grams flour
  • 30 grams beaten egg
  • Cinnamon


  1. Slice small container of ice cream in four and peel off the packaging.
  2. In a bowl, combine ingredients for the dough and mix to combine.
  3. Spread dough onto the tops of the English muffins and make a crisscross pattern with a knife to resemble a Melon Pan.
  4. Bake for 5 minutes at 230 degrees C or until the top is slightly browned.
  5. Place ice cream in between the English muffins and serve immediately.
