Easy Petit Four Cake

Mary Berry approves of this simple petit four.

Ingredients

Shortcake

  • 6 tablespoons butter, softened
  • 3/4 cup sugar
  • 1 teaspoon vanilla
  • 2 eggs
  • 1 1/4 cups flour
  • 1/2 teaspoon baking powder
  • Pinch salt
  • 1/2 cup heavy cream

Vanilla Whipped Cream

  • 1 1/2 cups heavy cream
  • 6 tablespoons powdered sugar
  • 1/2 vanilla bean, scraped

Petit Four Assembly

  • 2 cups strawberry puree
  • 2 pints strawberries, stems removed
  • 3/4 cup strawberry jam

Steps

Shortcake

  1. Preheat oven to 350 degrees.
  2. Grease a 9-by-13 inch cake pan and line with parchment paper.
  3. In the bowl of a stand mixer, cream butter and sugar until pale.
  4. Add vanilla and the eggs, one at a time, beating well after each addition to ensure that they are well incorporated.
  5. Add in flour, baking powder and salt.
  6. Mix until just incorporated, then add cream and mix for 30 seconds.
  7. Pour batter into prepared pan and smooth out the top.
  8. Bake for 17 to 20 minutes, or until golden brown and a cake tester comes out clean.

Vanilla Whipped Cream

  1. In the bowl of a stand mixer, beat the heavy cream, sugar and vanilla bean until stiff peaks form.

Petit Four Assembly

  1. Using a 3-inch square cookie cutter, cut 12 squares out of the cooled sheet cake.
  2. Cut 1 1/2-inch squares out of the center of 4 of the 3-inch squares.
  3. Set 4 cakes onto a clean sheet tray and spread each one with strawberry jam and thin slices of strawberry.
  4. Top with dollops of whipped cream.
  5. Continue in this fashion for two more layers, reserving the cakes with the cut-out centers for the tops.
  6. Top each stack by filling the center hole with a large dollop of whipped cream and whole strawberries.
